I love banana bread; my mom is not much of a baker but my childhood memories were filled with banana bread! The following recipe was unfortunately not my mother's (she was away when I desperately needed to make some banana bread) but it was a pretty big hit with the friends and boyfriend!
It's relatively simple and doesn't require too many ingredients.
Prep time: 30 mins
Bake time: 30-45 mins
Serving: Fills one whole 9X13 inch baking pan
Ingredients:
2 black bananas
2 freckled bananas
1 cup plain yogurt
1/4 cup butter (should be about half a stick)
1 cup white sugar
2 eggs
2 cups all purpose flour
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
Steps:
1. Preheat your oven to 350 degrees farenheit (176.6 degrees celcius) for half an hour.
2. If not using a non-stick pan, grease with butter. If you are using a non-stick, then skip this step.
3. Mash the two black bananas in a bowl. Then mash the less ripe bananas together with the black ones. If you like to have some big banana chunks in your bread, leave some of the less ripe bananas in bigger pieces.
4. Mix in the yogurt. Set the bowl aside.
5. In a large bowl, cream the butter and the sugar till smooth.
6. Beat in the eggs one at a time. Then stir in the banana mixture. Add the vanilla extract.
7. Combine the flour, baking soda, baking powder, and salt into the banana mixture. Stir only until completely mixed. (Too much stirring can cause the bread to be too dry).
8. Spread evenly into your pan.
9. Bake for 30 mins or until toothpick comes out clean.
